vEGGie Bake

Here’s a delish way to wake up! This vEGGie Bake comes in shareable size to enjoy with family and friends. Quick and easy to make with only 8 ingredients. Share as a side or main dish. Cooks in one pan and ready in about 40 minutes. Make ahead for breakfast or lunch. This vEGGie Bake is flavor-filled, protein-packed and easy to customize with ingredients you may already have at home like frozen vegetables, dairy, spices and cooked meat.

Ready in about 40 minutes. Serves about 12.


1 tablespoon butter, coconut or olive oil
1 cup frozen chopped bell peppers
1 cup frozen chopped spinach
12 eggs
1/2 cup cheese, grated
1/2 cup milk
1 tablespoon garlic powder
1 tablespoon onion powder


Heat oven to 400 degrees F (if butter or oil is solid, melt in a 9 x 13 baking pan while oven is preheating). Grease bottom and all sides of pan with the melted butter or oil. Spread bell peppers and spinach in the pan.

Beat eggs in a large bowl. Stir in cheese, milk, garlic and onion in the bowl to combine. Pour egg mixture in the pan. Bake for 30 minutes.

Tools: 9 x 13 baking pan, basting brush, bowl, whisk

Tips: To make ahead, assemble the dish, cover and refrigerate overnight. Uncover before baking.
