1 tablespoon butter, coconut or olive oil
1 cup frozen chopped bell peppers
1 cup frozen chopped spinach
1/2 cup cheese, grated
1/2 cup milk
1 tablespoon garlic powder
1 tablespoon onion powder
Heat oven to 400 degrees F (if butter or oil is solid, melt in a 9 x 13 baking pan while oven is preheating). Grease bottom and all sides of pan with the melted butter or oil. Spread bell peppers and spinach in the pan.
Beat eggs in a large bowl. Stir in cheese, milk, garlic and onion in the bowl to combine. Pour egg mixture in the pan. Bake for 30 minutes.
Tips: To make ahead, assemble the dish, cover and refrigerate overnight. Uncover before baking.
